Paneer Biriyani

Ingredients

Basmati Rice – 250 gms

Paneer – 200 gms

Oil – 20 ml

Ghee – 20 ml

Cumin seeds – ½ teaspoon

Cloves – 4 No.s

Bay leaves – 2 No.s

Pepper – 1 teaspoon

Pepper Powder – ½ teaspoon

Cardamom – 2 No.s

Star Anise – 2 No.s

Chopped Onions – 4 No.s

Ginger Garlic – 1 ½ teaspoon

Medium Sized Tomato – 4 No.s

Sugar – 1 teaspoon

Salt – To taste

Coriander Powder – 1 teaspoon

Garam Masala – 1 teaspoon

Chilli Powder – 1 teaspoon

Kasuri Methi – ½ teaspoon

Coconut milk – 1 cup

Coriander leaves – ¼ bunch

Curd – 3-4 teaspoon

Dry Mint – 10 leaves

Method of Preparation

Step 1 – Wash and soak the basmati rice for ½ an hour.

Step 2 – Boil 300 ml of water and add turmeric, ¼ teaspoon of salt, then add paneer to it. Let it cook for 5 – 10 minutes then, dip the paneer into cold water.

Step 3 – Cut the paneer to cubes.

Paneer Marination

Step 1 – Heat the oil in a pan, put 2 sliced onions to it and fry till it gets into golden brown colour.

Step 2 – Take the fried onions out, then chop it and keep it aside.

Step 3 – Now add 3-4 spoons of curd, few coriander leaves, ¼ teaspoon of salt, ½ teaspoon of sugar, ¼ teaspoon of Kasuri methi, 5 pieces of chopped mint, ½ teaspoon of pepper powder, ½ teaspoon of chilli powder, 2 pinches of turmeric powder, powdered 3-4 cloves to the onion and now mix it with the paneer.

Step 4 (Back to the method of preparation) – Cook the rice 75% and heat the oil and ghee in a cooker.

Step 5 – Add cumin seeds, cloves, bay leaves, pepper seeds, cardamom, star anise, and chopped onions, then till it becomes golden brown colour.

Step 6 – Now add ginger garlic paste to it and fry it well.

Step 7 – Now add chilli powder, coriander powder, turmeric powder, garam masala, Kasuri methi, finely chopped tomatoes, and salt, then mix it well. Cook the mixture till the oil removes out from the mixture.

Step 8 – Now take half of the partially cooked rice and add 50 ml of coconut milk to the mixture, then add the marinated paneer mixture on it, again add the remaining rice on it and add the remaining coconut milk on it.

Step 9 – Cook the rice for 20 minutes and mix it.

Your Paneer Biryani is ready!
